Flexibility of A-level Requirements

Hey,

I'm looking to apply to university later this year as a mature student (I'm 31). I'm currently studying a-levels through distance learning, and starting my A2 year at the moment. I'm studying biology, history and French and I always figured I would like to study either law or history at uni, but surprisingly I'm looking at something more science related potentially. Problem is I will only have one science a-level and almost all the science related courses I've looked at ask for at least two, which can include maths. Does anyone know if universities are flexible at all on these requirements? Has anyone been accepted onto a science degree course with only one science a-level?
