Question On Polynomial Testing Of Chi-Square Goodness of Fit Test

I was playing around with python to make a program that would test the goodness of fit for data using polynomials of order 1-5 (limited to 5 for now). Unless im being extremely stupid wouldnt increasing the order of the polynomial always give the same if not lower value for chi squared as the the curve can be manipulated in a more complicated way?

All the examples I ever did with class data only ever really used a second order test, would higher orders be better if you had a program to do so?
