I am currently taking eco as level but its very boring and i have taken the AP material therefore its enough
My question is should i take as level physics instead?
and should i take further math if i want physics?

Well it depends what you want to do after A Levels, there is more sense doing Economics than Physics if you want to do accounting. Also, no you don't need to do Further Maths if you want to do Physics, most people doing/done Physics (that I've talked to anyway) are not doing Further Maths. Although regular Maths will certainly help, but I guess you are already doing it.
