Two weeks is plenty of time. Go and start one of them right now, otherwise you'll set yourself up for bad habits of procrastination every time. I failed one class due to procrastination and I have never failed anything before that.So get off TSR and get started.

Two weeks is plenty of time. A week per essay... 4 days researching three days writing each. Just gather all your research and arguments together into a clear structure, make a really detailed plan of what you're going to write for each section and you can write in a matter of hours even.
7 days for 2000 words really shouldn't be a challenge!
Spend 3 days researching. I like to read a paper and then make notes on it. Spend 3 days writing. Once you factor out the intro and conclusion, you're really only writing 1500 words. 500 words a day isn't too much of a challenge.
1 day over at the end to re-read it and make adjustments.
