When making magnesium sulfate crystals what would happen if you evaporated all the water off at the end?

Well when making them I'm guessing it would be a liquid by the end (hydrate) so evaporating the water causes the anhydrous crystals to actually form.

If you didn't evaporate the water they wouldn't be crystals.
