I have an interview next week for a college. I have applied for Geology as well as 3 others. I now want to change Geology to Geography. Would the interview be a suitable time to do this? Or would it make me look indecisive and not very organised or driven?

It looks like you changed your mind. Everybody does, it's no big deal.
I would email the admissions team now and let them know that you want to change an option. If they don't get back to you before your interview, ask them then.
