You seem to be contradicting yourself since most western Chinese food does not contain any fish. Hence there should be no reason why they are obsessed with fish.
The parts of China which are on the coast may have plenty of fish dishes but if you've seen a map you'll know that most of China is far from the sea. On the same token, Bangladeshi food is centred around fish since most of Bangladesh is in reach of the coast.
You don't see any fish dishes at any Chinese takeaways, not because westerners wouldn't like it, purely because they only serve food that they are familiar with. I've been to plenty of restaurants like that.

Lmao Chinese takeaway food was created for western society they eat ALOT if fish dishes in China which is real Chinese food. Thats like calling McDonalds, English food.
