i plan to do

chemistry
physics

i want to do an econmics degree

are these a good combo of a levels or should i swap physics/chem for further maths?

Suitable combination- do whatever you feel will get you the best grades, universities normally only make offers on 3 subjects anyway!

Personally I think if you're trying to show strong maths then take further over chemistry (physics is seen as strong mathematically) but if you enjoy chemistry keep it!
If your going for the top unis I would recommend further maths to get onto the most competitive courses eg LSE or UCL. Swap it for chemistry
