Bunsen burner heat?

We did an experiment for assessment, the idea was that the more air in combustion, the quicker water will heat.
The results were unexpected, with the part open test boiling the water much quicker than the fully open.
I cant think of a reason for this, other than possibly the position of the hottest part of the flame. Is there meant to be a certain amount of air flow to make optimum combustion? As it is in cars, with a fuel-air ratio for best power?
