Boosting Personal Statement for Maths/Economics

Applying to university is just around the corner and I really need to start thinking of ways to boost my personal statement. I'm thinking of applying to courses like economics and maths but apart from my grades I have nothing to show that I actually want to study these subjects.

Baring in mind that I live the most remote area ever (so work experience is limited) what kinds of things can I do? If you have any book recommendations they would be greatly appreciated.

For Maths, try doing things like the Maths Challenge through your school?

For Economics, try to do one or two essay competitions like the one offered from the Royal Economics Society, and Oxbridge colleges.

For either/both, maybe do the Extended Project Qualification if it's offered by your school next year.

Visit conferences on economic thinking from thinktanks like the Institute for Economic Affairs. I went on a Villiers Park conference for Economics last year which I highly recommend.
