I very calmly and nicely show them the evidence and ask them to prove their stuff...they usually become quiet quickly :P

Im not the biggest expert but the phospholipid bilayer is just a very optimal structure and phospholipids will naturally arrange themselves in this pattern. It just takes the molecules to form (which occurs when the elements are in a certain abundance) and you can get this pattern occuring.
