Girls who fidget?

What's the deal with girls who fidget? I know a girl who on certain days can be quite fidgety and nervous when speaking to me. For example she will touch or grab her hair, or touch her face when passing something to me and just seem very self concious. Other days shes not. She also seems fine the fact we often touch hands when we pass something to eachother, she doesn't pull her hand away etc. I've known her for a few years, im just curious as too why certain girls fidget etc?
I don't think she 'likes' me, she's older than me by 6 years.
