Mature students vs. adult learners

could someone explain the difference between a mature student and an adult learner?

There's no difference. It's just that "mature" sounds older, so a 25 year old might not want to be/realise they are a "mature student". "Adult learner" is therefore more obvious. But then anyone over 18 is technically an "adult", so that could get confusing with students who went to university after a gap year, or even just straight after A Levels at the normal timescales.

Generally, "mature student" tends to be used in connection with university (and getting ready for uni with an Access course) and "adult learner" tends to be used more for everything else, but both can be used interchangeably.
