I think for most popular it would be: Law

Least popular: Mathematics / Physics

Viticulture and Oenology. I think only one place offers this so it can't be very popular!

I can think of lots of degrees which are only offered by one university. That doesn't mean they're unpopular, just niche.

My reasoning wasn't just because one university offers it, it was because it is unpopular. Who in their right mind would pay such an exorbitant fee to study something so ridiculous.

The study of Ottoman trade would be niche, the study of a footballer is pure stupidity.
Dance Studies and Waste Management is a shamefully unpopular degree.

Being able to describe waste processing work flow using the medium of interpretive dance is a vital life skill.
Maths and Physics are two really big common degrees. Not too sure what your definition of "least popular" is.

Fair enough, it's a module which students partaking in media studies, sociology or sports science degrees and optionally enroll on to.
