I think for most popular it would be: Law

Least popular: Mathematics / Physics

How are you defining popularity? Because in terms of the number of people applying relative to the number of places, I'm pretty sure that Maths and Physics are not unpopular...
Nursing is the most popular, according to this (if you're going by sheer volume of applications, that is).

In what sense is Law more popular than, say, Medicine?

Most popular - Law
Least popular - Languages

I agree with you about law, but I think languages is pretty common as well. Especially since there are so many double degrees with a language in them.

They're offered at many universities, but competition is low. By popular, I'm talking about competitiveness to get in as well.
Oh and - for 2013/14 UG degrees enrolled student numbers then the answer is Business (115,000) followed by Psychology (71,500 students).

Art and Design had 69,000, Law had 66,000. Nursing 59,500, History 50,000, Medicine has ~45,000, Modern Languages around 30,500.

Maths 35,000, Physics 17,000

Classics and Veterinary with ~5,000 is probably about as small as it gets without becoming defined as "niche"

Staffordshire - but it was just a single module; not a complete degree.

Therapeutic childcare.

Offered by one university (Glyndwr) but not a useless subject.

Child and family welfare studies (Leeds Trinity) Bradford, Birmingham City and Liverpool Hope do similar degrees though.

Afraid not. It isn't available for free online. Cheapest version would be table 4b of this for £60:
https://www.hesa.ac.uk/index.php?option=com_pubs&Itemid=&task=show_year&pubId=1&versionId=25&yearId=312

Breakdown would likely be a bit different if restricted to entrants only. Medicine is 5+ years. Languages and some science degrees 4years.
