How are minors seen by employers?

Hello everyone, I'm studying French and Portuguese at Southampton and I just got an email through about the option to take a minor starting semester 2. Does anyone know how employers see minors? The options are as follows:

American studies
Anthropology
Applied Economics
Archaeology
Creative writing
Criminology
Demography
Education
English
Film studies
Geography
History
International Relations
Jewish History and Culture
Linguistics
Music
Philosophy
Politics
Psychology
Social Policy
Sociology
Sustainability
Ancient World
Ecology and Environment
German cultural studies
Latin American Studies

I'd like to join the diplomatic service or, if that doesn't work out, go into business. So, obviously there are certain minors (such as international relations) that would help me there. As well as that there are some that I just happen to be interested in (such as creative writing) and some that Southampton has really good resources for (Jewish History and Culture being a good example of that.

TL/DR:
I want to be a diplomat or go into business.
A: should I do a minor?
B: what in?
