Compare your absorbance results or whatever, then set a standard value as a base to work from.
but you can't measure the absorbance of a leaf because it is solid

im not sure about measureing the rate either. do we need to? because you can still see the effect on rate even if you justmeasure the amount of time it takes for a leaf to turn blue black in iodine. although i don't know if that's too simple
