You should have a good understanding of Maths and Physics if you decide to study Optometry, while you'll need to be genuinely interested in Chemistry to succeed at Pharmacy school.
Another thing to consider is that Pharmacy is one year longer than Optometry.
Honestly, both of them are great courses with high graduate employment rates. Look at the University of Reading's Pharmacy course for example, who have had a 100% graduate employment rate for the past four years.
I will say this though - don't study something that you do not have a genuine interest in and if your biggest concern is the salary.

I understand what you're saying but I'm more concerned about getting a pre-reg. I hear that there are many students who don't get pharmacy pre-reg which is bad because if you don't do it within four years of graduating, the degree is essentially useless. How hard is it to get a pre-reg if you have no family members doing pharmacy?
