What other University Courses could I study with these A-levels?

Fundamentally, I would like to study Law at University however, I don't want to do a full degree in Law, I'd rather change courses (do a conversion).

I study:
Economics
Biology
Mathematics
English Literature

I don't want to do English or anything, I am considering Economics but I was wondering what else. I only have one science and that's not usually a problem when combined with Mathematics but I know that if I had chosen to study physics or chemistry instead of just biology I'd have a lot more options.

You should have picked History and then you would have had the perfect combination for a History student. Then go on to do a Law conversion. But with the current A Levels you have, you have a pretty good chance at doing Economics at uni. Then converting to do Law.
