I understand the idea that water is removed via the 2 ends of the monomers, but I really don't know.

the OH group at one end condenses with the -COOH group at the other end of the second molecule, making an ester linkage with the elimination of water.

HO-R-OH + HOOC-R'-COOH --> -(O-R-OOC-R'-CO)n-
