I think this is because the carbon atom has 4 electrons in its outer shell, and forms 2 double bonds with 2 oxygen atoms. The other oxygen atom forms a dative covelant bond(hence the -2) so 3 atoms around central atom and no lone pairs is trigonal planar which is 120. Not 100% sure tho
