Bile and Lipid Digestion

    I have been given the following source form my teacher to research a method to investigate the effect pf bile on triglyceride digestion: http://shsbiology.pbworks.com/f/Brea...+CH+29+Lab.pdf
    However, I don't know what goes in test tube number 2? Could it be sodium carbonate to act as a control, as well as the milk and phenol, so the phenol will stay pink? Could it be just bile, as well as the milk and phenol, to see if bile alone can digest lipids? I am very confused.

    Also in another method, they suggested boiling the bile? I don't understand why
