What course would you do at university to become a flight engineer?
    How competitive is it?

I doubt there are any specific flight engineering courses but I would probably say Mechanical Engineering or just general engineering are your best bets. In terms of how competitive they are, Mechanical Engineering will always be pretty competitive as engineering jobs are usually very well paid and with an engineering degree you can go into many fields.
