Yes you have the opportunity - if the additional AS isn't a standard offer at your school/college then that should be explained in your reference and it wont affect your application.
You need to speak to your school/college about whether you can take additional qualifications - it might be a better idea to look into taking the EPQ. A number of universities place a lot of weighting on a good EPQ grade (often lowering your offer) and under the new tariff scheme an EPQ is worth more than an AS so for tariff based offers it would help you meet your conditions.
