I want to apply for multiple courses. They are all similar (electronic engineering, networking), but how can I make my personal statement suite all of them at once?

With difficulty. They don't sound very similar so I would choose one and stick with it. The last thing you want is rejections because you sound confused or unsure in your PS.

You would have to choose between the courses at one point if you got offers for both, so it's best to choose now and give yourself the best chance of getting offers.
