The first of your examples has the higher average, is more consistent and is the one that i would say is better. I would say that a candidate who scores consistently high (say in the 600s) is better than one who scores in the 500s but who has one section in the range 700-800, which would lift their average considerably. However, i don't know how universities use the UKCAT, so its probably just total/average score that matters as opposed to individual section scores.

I've heard that some unis rank their candidates by lowest UKCAT score, in which case constant scores would be best in the examples you gave.
