I wouldn't have thought so, no. They usually specify that it has to be a recent academic reference i.e. from a tutor who currently teaches you at university. I would have thought that would be the case for internships, but for postgraduate courses, it would most definately be the case that secondary school references are no longer valid.
So, do you think a reference letter from my [final years] secondary school head teacher (who knows me very well) would be OK for summer job/internship applications, especially considering that I'm at university since only one year?

Best thing to do would be to email the specific internship job you were looking at applying for and ask them, as it might vary. Though I still think that a reference needs to be from the most recent person that's taught you, even if you have only been there for a year.
