Between which years is it most common to take a summer internship? The penultimate summer before you graduate?

Based on a 3 year course

university year 1
This Summer??
university year 2
This Summer??
university year 3

Based on a 4 year industrial course

university year 1
This Summer??
university year 2
This Summer??
university year 3 (Industrial Year placement)
This Summer??
university year 4

Penultimate summer is the most common.

An internship is specifically about getting a graduate job offer afterwards.

Penultimate summer, or after final year if you're taking a masters (as you're technically in your penultimate year again.

Sometimes you can sneak through the net though, as it were.

Yeah, I wasn't sure what you mean by 'sneak through the net.' Does that mean they'll just be curious why I wasn't applying the previous year?

Well I mean sometimes they don't notice or don't mind during screening that you're not in the 'right' year
