Obv. it will vary from institution to institution, but please fire away with what yours offers (and state it!).
I just wondered whether any/ all Politics courses require you to take modules which focus on the very latest current affairs, or whether this does not happen...
I also wondered if when arguing a point in a Politics essay whether you must reach a definite point, or if it is okay to be undecided...?

No, they don't. Politics is about political systems, political ideas/theories, and factors influencing the political process. Current events might be used to demonstrate the relevance or irrelevance of some of those theories, but it's not the focus of any political class.
It's good to reach a definite point in any essay, regardless of the subject. If someone wants to simply know the pros and cons of an argument, they'd read the relevant books.
