Factors: probably concentration of enzyme and substrate?

Why can choosing which enzyme to use be difficult; well, I guess it depends on the reaction you're carrying out, but all enzymes are highly specific so you'd need to pick the right one for the substrate you're using; if you don't it won't work. You might need one that's tolerant to changes in temperature or varying pHs (there are some that are a lot more stable that others). But to be honest if you want to carry out a precise reaction there's usually only one or two enzymes you can use...
