you could use a thermocouple to investigate how the temperature varies in a flame

you could look at the spectra from different elements in a flame

put a flame in a strong electric field (between parallel plates) and see what happens

how quickly does a charged object discherge near a flame

Hmm maybe I'll test how the flames conductivity varies with temperature and if chucking some transition metal makes any difference to it taking into account the metal ion charge.
