how do you do a composition sign on ms word (ms word 07) - that little circle thing that goes in the middle between f and g if for example, you want f(g) you can write f (little circle thingy) g.

No idea for Word, but when typesetting maths, you should really be using LaTeX in which case \circ should do

f∘g(x)f \circ g (x)
I suppose you could use 25CB, Alt+X.
