For social policy, you basically learn about how society can help people e.g. services like health care etc. You do quite a bit about civil rights also. Erm for economics at LSE they consider great interest in risk assessment. So future career prospects can be in the civil service, law (if you do the 2 yr converting), and for the economics side the financial industry  , trade, hedge funds, teaching, proffesorship (research) etc.
tbh if you do economics at LSE, your not going to have much of a problem finding employment atleast 30k+
