Default As's taught myself

This year I am completing 2 A-Levels (I.T and Maths) aswell as one As (Economics)

Last year I was stuggling with Physics so dropped out leaving me with only two A levels

Next year I am completing my Economics A - level and would also like to take an As working from home by myself with revision guides etc

I'm predicted Maths A Economics A I.T B so i am fairly clever.

What sort of subject would be a good idea to study myself and is related to the subjects I am taking now (not sciences)

In my experience, the only things that you want to be studying with no external help are maths or the sciences. For everything else, where it isn't based on pure knowledge, you need a teacher there to teach you how to do the exam. In classics, for example, you could know the Iliad back to front, but if you don't know exactly what the examiners want in each question, you will get a bad grade.

Further Maths, definitely. Depending on exam board, you can get away with FP1 (which is easy) and two other easy modules with no hassle.

FP1 which is easy? I wouldn't fancy self-teaching Further Maths. Much rather one of the sciences.

Well, they should all be doing AS maths. Easy as anything.
