i've had it with pesto, tomato and basil and several dolmio sauces in england

in italy i had in with a tomato sauce once, another time a creamy cheese sauce and another time butter and sage (not sure of recipe..)

but how is it best?

When I was in Pisa all the combinations in the restaurant I had it in were tomato based, I had bolognaise and my friend just had it with a passata style sauce.

But all the stuff you mentioned would go to be honest! I prefer tomato since with cheese it would be a little more heavy for me..

Spinach and tomato. Make it by adding mascapone/ricotta to a tomato based sauce (or blend tomatos to made your own) and then cook in briefly steamed spinach. Add basil and black pepper according to your own tastebuds.

Oh and don't forget the gnocci

I like to fry the gnocci in chilli and garlic after it's cooked. Then serve it with fresh tomato, spinach (friend with the gnocci, don't bother boiling) and Parmesan.
