Easy Stew

Easy Stew (Serves 1)

Ingredients

  • 1 Average Sized Stewing Steak
  • A Slosh of Red Wine (optional)
  • A Splash of Vegetable Oil (for frying)
  • 10g Butter (for frying)
  • 3 Beef Stock Cubes (made up following instructions on the packet)
  • 1.5 tsp Marmite (optional)
  • 50g Barley (or Soup mix) (optional)
  • 1 Large Onion (Chopped roughly)
  • 2 Cloves of Garlic (Crushed)
  • 1 Large Carrot (Sliced)
  • A Small Swede (Diced)
  • 2 Sticks of Celery (Sliced)
  • 2/3 Potatoes (Quartered)
  • Any other root vegetables as per preference (I recommend some green cabbage added a few minutes before serving)

Method

  1. Dice the steak and fry in a pan with the oil and the butter.
  2. Once browned add the slosh of red wine and keep on high heat until it has reduced in volume.
  3. To this pan add chopped onion and crushed garlic. Keep on heat until onions are softened slightly.
  4. Add your made-up stock.
  5. Add the barley, which acts as a thickener.
  6. To this add all of this other vegetables except the potatoes. Bring to the boil then turn the heat down to a simmering point. Simmer for about an hour/ an hour and a half.
  7. Add the potatoes and cook for a further 25/30 minutes.
  8. If the gravy has become too thick, mix the Marmite with about 400ml of water and add slowly until the gravy has the desired consistency.
  9. Serve piping hot with lots of bread. Enjoy!!
