Jacket Potatoes

A staple of the student diet.

Ingredients

  • A Baked Potato

Method - Microwave

  1. Prick the potato all over, then wrap in kitchen paper, and put in microwave
  2. Microwave on high for 4 mins on one side
  3. Then turn potato over and repeat
  4. It should be squooshy. This is the offical term. If not squooshy, then put on for another minute on each side
  5. Cut open and add a filling or two or three

Method - Oven

  1. Wash and dry the potato
  2. Pre Heat the oven to 180 to 200 degrees centigrade
  3. Prick the potato all over and then wrap in tin foil
  4. Place in oven for 90 minutes
  5. It is ready when you can stab your fork into it and feel little or no resistance as you pull it out
  6. Cut open and add a filling or two or three

Method - Stuffed Jacket

After cooking the potato

  1. Scoop the insides out and mash with an egg, marg and cheese
  2. Pop back in jackets and sprinkle cheese on top
  3. Grill for a bit, serve with beans, that is gorrrgeous

Comments

Jacket Potatoes are a very easy food to cook, very filling and very healthy. If you enjoy the potato skins, try rubbing salt and olive oil on them prior to cooking in the oven, it makes them salty, crispy and oh-so-delicious.
