Recipe - Peas and potatoes in tomato sauce

Ingredients

  • Frozen peas (500gr)
  • 4-5 potatoes
  • 1 pack of tomato juice and a tablespoon of tomato paste
  • 1 onion
  • olive oil
  • salt/pepper

Method

Cut the potatoes in quarters.

Heat some olive oil (enough to cover the bottom of the stew pot:5-6 tabelspoons).

Chop the onion – preferably in the food processor until it becomes a pulp.

Throw the onion in the olive oil and stirr to make sure that it doesn't stick at the bottom.

After about a minute, when the onion is turning yellow, add the potatoes and stir again.

Let the potatoes fry in the olive oil for about 2-3 minutes. Just make sure they don't get stuck at the bottom.

Add the peas – you don't have to defrost them.

Stir again with a wooden spoon, add the tomato juice and the tomato paste, 3-4 glasses of water, salt and pepper, and let the hob's temperature at the highest level until the water boils. Then lower the temperature, and let it boil slowly for 40-50 minutes.

Take a look at it from time to time to make sure it doesn't need more water – if the water disappears too quickly, and the sauce is thick but the food not ready yet, lower the temperature some more and add hot water. You know it's ready when the tomato sauce is not too juicy and the potatoes easy to cut with a fork.
