How does evaporation occur?
Particles absorb heat energy causing them to move faster. Some of the particles escape from the surface. The remaining liquid is cooler.

Bigger surface area, higher temperature and/or wind/fan/draft.

Particles los heat energy making them move slowly making them more closer together (Condensing from a gas to a liquid)
