Kefalonian Meat Pie

Ingredients

  • 1 Largish Pack Beef or Lamb Mince
  • 16 sheets Filo Pastry
  • 2 TBSP Tomato Purée
  • Stock - Same Flavour as Meat
  • 3 Cups White Rice
  • 3 Potatoes
  • Mint, Oregano and Cinnamon to Taste
  • 1 Clove Garlic
  • 1/4 Cup Oil / Butter
  • 1 Clove Garlic
  • Min. 6 TBSP Melted Butter
  • 1 Onion

Method

1) Pre Heat Fan Oven to 170℃

  • NB If not using fan oven adjust temperature as appropriate.

2) Skin and Dice Potatoes.

3) Boil rice and Potatoes.

4) Peel and Dice Onion.

5) Brown Mince and Onion with the Garlic, Mint and Oregano.

6) Prepare stock.

7) Place Diced Potatoes, Rice, Mince and Tomato Purée in a mixing bowl and mix well.

8) Brush bottom of dish with butter.

9) Lay a layer of Pastry over the bottom of the dish and brush with butter.

10) Repeat until half the pastry is used.

11) Place filling in dish and spread even.

12) Lay a layer of Pastry over the filling and brush with butter.

13) Repeat until all the pastry is used.
