Menemen - Turkish one-pan eggs and peppers

So you think the cupboards are bare and the fridge is empty? My guess is there's an onion, a lonely pepper left over from that three-pack, at least one tomato, some passata or chopped tomatoes and a few eggs hiding and all looking pretty uninspiring.

Instead of making yet another boring omelette, try this Turkish classic, which is delicious, incredibly cheap and will fill you up until you eventually make it to the supermarket.

Ingredients

  • 1 large onion
  • 1 green pepper (but any colour will do)
  • 2 tomatoes
  • 3 eggs
  • 250g passata
  • 1/2 tsp chilli powder
  • 2 tsp caster sugar
  • 3 tbsp soured cream (to serve)

Method

  1. Slice the onion and the de-seeded pepper.
  2. Fry on a medium heat with a little oil.
  3. Quarter the tomatoes and add them to the pan.
  4. Once softened, sprinkle over the chilli powder and caster sugar and pour in the passata. Stir well and leave to reduce.
  5. Once reduced, make three wells, evenly spaced, and crack an egg into each one. Cover and leave on a very low heat, until the eggs are just set.
  6. Serve straight from the pan (if you want to save on the washing up) or spoon onto plates, topped with a little soured cream.

Comments

A great lunch that will keep very well in the fridge. Warmed up in a pan it's just as tasty the next day... if you still haven't managed to make it to the supermarket!
