Recipe - roasted chicken breast on a bed of fried salad


  • 1 chicken breast [preferably with skin on]
  • Handful of salad
  • 3-4 New potatoes
  • 3-4 Baby tomatoes
  • 1 tablespoon of soy sauce
  • 1 tablespoon of honey


At the very beginning thinly slice the potatoes and place them in boiling water until soft (Now do the rest while the potatoes are boiling)

Mix the soy sauce and honey together in a small dish

Coat the chicken breast in the sauce [leave for 20mins if possible]

Place some olive oil in an oven proof griddle pan or frying pan and turn on high heat

Fry the chicken breast skin-side down for 2mins then flip over and cook for another 2 mins

Now place the pan in the oven on 200C for 8-10mins

Strain the potatoes

Heat up a frying pan with olive oil in it

Chuck the potatoes in the pan when hot and fry until golden brown

Throw in the salad and tomatoes and cook until salad has wilted

Then Serve by placing the salad on the centre of the plate and place the chicken on top
