Recipe - spicy chicken burgers - The Student Room

Ingredients

For 2:

  • 2 x Chicken Breast fillets
  • 2 x pieces of white toast
  • 1 egg (any size will do)
  • Mild chilli powder
  • Paprika
  • Salt & pepper
  • 2 x Burger buns & some ketchup to serve

Equipment

  • Cling film
  • Rolling pin
  • Food processor - or sandwich bag
  • Plate
  • Bowl
  • Whisk or fork
  • Oven or Grill

Method

  1. Break toast up into breadcrumbs - either wizz up in a food processor or place in a sandwich bag & bash with a rolling pin
  2. Turn breadcrumbs out onto a plate, mix with chilli powder & paprika to taste & add a little salt & pepper
  3. Place each chicken breast between two pieces of cling film, bash with rolling pin until about half original thickness
  4. Put egg in bowl, beat a little with the whisk
  5. Take a chicken breast & dip it in the egg, then the breadcrumb mix until it's covered, place on baking tray/grill pan, repeat with other piece of chicken
  6. oven bake (170^o fan, 190^o conventional) for 25-30 mins, or until chicken is white all the way through
    • or grill high ~10mins - keeping an eye on burgers as breadcrumbs may burn under grill

Serve on buns (toasted if you prefer) with chips, waffles or salad if you like
