Haitch isn't a word, it's just how some people pronounce the letter.

Again, like 'aitch' is the correct pronunciation of 'H', 'zed' is the correct pronunciation of 'Z'

Exactly. 'Butter' is pronounced 'butter' because it has t's in it. 'Aitch' is pronounced 'Aitch', because there isn't an 'h' at the beginning. Simple.

From experience people can either say it as

"Zed"

or

"Zee" (pronounce Zero and it's the first part. Ze.)

Yes!! How'd you guess?!

And I even write 'Z' as Z. Being a mathematician I use Z quite a lot and I've found that international students find it easier if you say Zed as it is quite distinctive.

There really is no good reason to use 'Zee'.
