So would A2 maths, A2 FM, A2 economics and AS history be good? Or is there no enough diversity with my full a levels?
Yeah thats pretty good, you should worry less about your options and more about you extra curricular activities, top unis esp for their specialising degrees like eco and LSE where majority of applicants will have top hence similar grades, so you need to stand out.

Well something like getting work experience at a banking firm or young enterprise is good.
But it doesn't have to be economics oriented, things like charitable work it good. Some students are even known to have created their own charities and raised several thousands of dollars but thats 1 in a thousand ;p also any sport or musical achievements are really good.
