Cualquier is an any, but not the one you're looking for. The only time you'd use no and cualquier would (for example) be 'no es un día cualquiera' - it's not just any (old) day (because it's your birthday... or whatever).

I would just say 'no sé hablar italiano'.

If it was 'I've not spoken Spanish in a while' then it would have to be desde + point in time you last spoke it or desde hace + amount of time since last speaking it. I think it was likely the latter that was wanted here.
