Why is that an offside though? Surely, being able to make it past the defenders is a skill and should be encouraged?

Without offside, players could just goal hang and wait until the ball gets lobbed to the other side of the pitch :P

So to avoid being penalised for offside, the strikers have to run around the pitch a lot more and separate? So they're not all in the penalty area?

Basically yeah.
When they're attacking anyway, they can't pass 'over' a defender if the last defender is further away from the goalie than the attacker.
