What is a 'good acquaintance'?

As opposed to a friend?

If you told someone that "we can be just good acquaintances", what would that imply?
See each other and say hi now and then.maybe the occasional short convos.

Someone you'd say hi to if you saw, comment on their photos/statuses on facebook, sit with in lectures or go to the pub with in a group of friends. I'd say the difference between a good acquaintance and a friend is that I'd probably not text an acquaintance or meet up with them on my own and tell them anything personal.

Here's another separate question to the one above:

If you unfriended someone on facebook but then told them you want to be just 'good acquaintances' with that person, what does that mean to you?

I'd take that as a brush off to be honest. If they don't even want you to be their facebook friend then they obviously no interest in you being in their life at all. Sorry if that's not what you were hoping to hear.

sounds like a situation involving a person of the opposite sex and an attraction which isn't mutual
