It doesn't really matter as long as you have the core subjects plus a few more. The average is 10, I'd say, but I've seen 8-14.

It depends on the university and the course, but most will if you have good AS grades in relevant subjects.

For a lot of universities/courses it doesn't matter much, but having more GCSEs will help your application slightly.

There's someone I watch on YouTube that only has 8 GCSEs and goes to Cambridge.

That's fine then. Take as many as you want(at least 5), but it won't affect your application too much. Make sure you get good AS grades.
