Binomial and poisson

When using the tables for the binomial and poisson distributions, does it matter if the sign is 'less than' or 'less than or equal to'/'more than' or 'more than or equal to'?

Yes - they are discrete distributions: P(X<k+1)=P(Xk)\mathbb{P}(X < k+1) = \mathbb{P}(X \leq k) - the tables give values for P(Xk)\mathbb{P}(X \leq k).

So if you wanted to compute P(X<5)\mathbb{P}(X < 5) where XX is distributed binomially or with a poisson distribution using the tables, you would need to convert this to P(X4)\mathbb{P}(X \leq 4) then look up 44 using tables.

And just checking, but normal tables are continuous, right? So for them it doesn't matter if its 'less than' or 'less than or equal to'

Yes, a normal distribution is a continuous one - it has the property that P(Xk)=P(X<k)\mathbb{P}(X \leq k) = \mathbb{P}(X < k).
